African Sweet Potato & Peanut Stew

After a very hectic day, my husband, David, was kind enough to jump behind the burners and try his hand at the African Sweet Potato & Peanut Stew. As he is an avid lover of all things sweet potato, it was no surprise that this was his choice dish. The stew marries the sweetness of the sweet potatoes, cinnamon, and ginger with the rich, creaminess of the peanut butter. He served this stew over chewy wild rice.
