
Some foods bring out the song in me. Mentions of “apples and bananas,” cause me to sing a camp song playing with the vowels in the words. Say “Peanut Butter and Jelly,” and I’m singing from a grade school classic, “First you take the peanuts and you pick them, you pick them, you pick them, pick them, pick them…” So it was with much crooning that I made these sweet and delicate Peanut Butter and Jelly Cookies from Vegan Table. The peanut butter cookie portion was moist and dense, and it could be made a bit different every time, depending on your choice of jelly. These cookies would, of course, be wonderful for children, but they’re also so pretty, they’d fit perfectly well at a tea and coffee luncheon for adults. They come together in no time with ingredients most of us already have. Make them for last minute guests or, if you’re like me, for when you just feel like singing.
