Smokin’ BBQ Tofu

Girlfriend, boyfriend, or spouse out of town? It’s time to get your garlic on. Serious garlic lovers only need apply for today’s lunch of Smokin’ BBQ Tofu from Vegan Table, spinach sauteed with garlic, and bread smeared with hot roasted garlic. The barbecued tofu is a great meal to put together for an easy lunch or quick dinner. I sliced the tofu, wrapped it in a towel, and pressed it under a heavy book while I was finishing up before lunch. Once I was ready, the tofu required a quick sizzle in a lightly oiled pan until it was golden brown on both sides. Then I baked it in the oven with sweet and smoky barbecue sauce. While I was at it, I roasted a couple of large garlic cloves (with skin removed) for thirty minutes, tossed in extra virgin olive oil and put in a covered baking dish. Just before the tofu and garlic was done I put a couple of slices of rye bread in the broiler, and I sauteed some chopped garlic in a lightly oiled pan. Then I threw in a very generous amount of baby spinach with the garlic. Since baby spinach cooks down so much, I always put in much more than would at first seem necessary. This mouthwatering meal had me licking my plate clean… and then trotting off for a toothbrush.
