I made this yesterday and we ate it all. I made a double-recipe today and we ate half already. I’m using corn tortillas then topping the chickpeas with salsa roja, sliced black olives and fresh avocado. Seriously I think I like this better than tacos with ground beef! (Obviously I’m only a part-time vegan!)
