From the outside, veganism looks like limits. From the inside, freedom.

What a great interview. I really like what he said about veganism being a way to stand up for one's beliefs, and that being what a lot of "manly" icons do. Great point!

Thanks, Jenny! That's so nice to hear.

It does seem ironic that in "limiting" our diets, we've actually expanded them in so many ways we couldn't see before. It is such a gift that regardless of the reason people are brought to a vegetarian or vegan lifestyle that there are so many other benefits and side effects that come with it. It seems as if even those who adopt a plant based diet primarily for health somehow find their hearts open to compassion in places they didn't realize it was disconnected.

I became vegetarian (vegan when possible) mainly for physical and mental health reasons. I truly believe the studies that show plant-strong, dairy free, and corn syrup free diets help cure and prevent disease by way of personal experience. I, for one, can vouch for simply feeling better after cutting out milk, soda, and fast food. Little by little, I also cut out meats and cheeses. I was fortunate to find a companion who suffers a serious lactose & milk-fat allergy, so that means no milk, cheese, or butter in the household. He also preferred a low-meat diet, initially, so it's been very easy for the both of us to team our efforts and adapt to a vegan lifestyle.

I have to second David's comment about now seeking out and enjoying "so many exciting and different cuisines that I had never really thought to try before". People who don't venture outside of the standard 4 American meals, truly are missing a great deal of amazing cuisine. My tastebuds have never been so stimulated before. I enjoy eating now.

Something I am fascinated about being vegetarian/vegan is that I don't miss meat. I never crave a "good steak". I'm always satiated. And a side-effect I love about it is the compassionate part. It just adds another layer to being mentally, physically, and spiritually healthy.

Great post, Cadry! I do enjoy your blog. It's like a support system. :)

Thanks for your comment, Hanlie! I'm so glad you enjoyed my post. I can absolutely understand your hesitation about using the word "vegan" and opting for "predominantly plant-based," but I say, why should we let the nay sayers decide what it means to be vegan? I say we embrace the word and give meaning to what it truly exemplifies.

Thanks for this post, Cadry! I really enjoyed it... I must admit, I'm guilty of using the term "predominantly plant-based" a lot, usually because people are so resistant to giving up something that they perceive as a pleasure. My aim is to help them see that they can do without it and that plant-food is really versatile. But I totally get what you're saying and I think I'll get there soon!
