This time of year, resolutions abound. Gyms are filled with people vowing to exercise more. Green smoothies have moved in where Christmas cookies used to be. And many people are using these early days of 2017 to work towards living more compassionately by going vegan.
In many ways, veganism affects every facet of a person’s life – from the food you buy, to the clothes you wear, to the products you use to wash your hair, and even to where you choose to go or not to go on vacation (i.e. you won’t be seeing me at Seaworld – ever). But for most of us, it starts in the kitchen.
Over the years, people have confided to me that they’d like to go vegan, but they don’t know where to start food-wise. So I put together this list of 25 easy vegan recipes. It’s a round-up of breakfasts, lunches, and dinners. The dishes are user-friendly and satisfying for people who are dipping a toe in the vegan lifestyle.
