And so we’ve come to the end of the shortest month of the year. We’re having a spring thunderstorm outside as I write, which is par for the course. This month has brought tank top weather in the upper 70’s and days with snow zooming from the sky like stars on warp speed. Why not thunder too?
I’ve been quieter than usual this month on the blog, as I’ve been doing a lot of behind the scenes work on it – fixing, tweaking, and beautifying. I have lots of recipes in store for March that I can’t wait to share with you!
In the meantime, let’s look back on February…
The month started with David’s birthday. We celebrated with a long birthday weekend that included lunch at one of our favorite restaurants, getting together with family, and cupcakes made by our friend, Ashley. She went with the cinnamon chocolate cupcakes with spiced buttercream and candied maple walnuts from Oh She Glows. Cinnamon and chocolate are so lovely together, and they were perfectly moist.
With these unseasonably warm days, I’ve been able to get out and take some long hikes, which is usually not possible in the middle of an Iowa winter. Not only that, we fired up the grill!
As usual, we had his and hers burgers. Double stacked Gardein beefless patties for David and a Field Roast burger for me.
Mid-month it was time for Valentine’s Day. I got David this card made by Michelle at My Zoetrope. Michelle is a fellow vegan, and I’ve purchased several cards from her over the years.
This one encompassed a lot of our personal favorites – hot sauce, the internet, coffee, donuts, and a cat who looks very much like Avon.
Our weekends have brought big, leisurely breakfasts, just like we like. Tofu scrambles, chickpea scrambles with no shortage of avocado, and then colorful kale salads for lunch.
Speaking of food, I’m continually updating old posts that could use some TLC. This month I re-photographed some recipes from my early days of blogging. Iowa readers, I’ve also updated my Vegan Iowa and Vegan Des Moines pages.
