Peanut butter & banana on tortillas makes for a super easy vegan breakfast or snack. It’s a hit with adults & kids alike!

It’s funny how times change. If you look at old film of Elvis dancing, it’s hard to believe that there was so much controversy around his dance moves.

Dubbed by some as “Elvis the Pelvis,” during one appearance on the Ed Sullivan Show he was filmed from the waist up, so that people wouldn’t be scandalized by his moves.

Nowadays, his dancing seems tame by comparison to what is de rigueur in the music business.

In addition to being remembered for his swiveling hips, another Elvis phenomenon that lingers was his affinity for peanut butter and banana sandwiches. (Some accounts include bacon in the ingredient list as well.)

Peanut butter and banana really do taste marvelous together. The nuttiness of peanut butter with the sweetness of banana come together divinely.

Sometimes when I need a fast snack, I’ll pop peanuts into mouth simultaneously with a bite of banana for crunch and sugary sweetness all together.

But when I don’t mind the tiniest bit of cooking, The Elvis peanut butter and banana on tortillas makes for an excellent breakfast, lunch, or snack. It takes that classic Elvis sandwich and moves it into quesadilla territory.

Two whole wheat tortillas are toasted in a dry skillet with a slathering of peanut butter and thinly sliced banana. The banana becomes melty, and the peanut butter gets a little bit gooey.

I like to use crunchy peanut butter for extra texture, but feel free to use whatever you have on hand.

Since I’ve never been one for cold cereal, toasted tortillas with peanut butter and banana are a warm, filling, and satiating way to start the day. The punch of protein from the peanut butter keeps me full until lunchtime.

And despite Elvis’ “shocking” behavior, this breakfast is kid-friendly as well. So go ahead and make one for yourself, but please, don’t step on my blue canvas shoes.

Toasted Peanut Butter & Banana on Tortillas

This easy vegan breakfast is a winner for adults and kids alike. Melty banana comes together with gooey peanut butter in a way that's sure to satisfy.

Ingredients

  • 2 whole wheat tortillas
  • Generous slathering peanut butter
  • 1/2 banana thinly sliced

Instructions

  • Slather two tortillas with a generous amount of peanut butter. Add a layer of thinly sliced banana to one of the tortillas. Smash the tortillas together, like a quesadilla.
  • Toast the tortillas in a skillet on a medium heat for a few minutes on each side. Once one side is brown and toasted like a perfect marshmallow, flip and toast the other side. Remove from skillet and cut into triangles before serving.

    Am looking for easy morning recipes that aren’t a smoothie so was very excited to see this. It was very good and very easy to make, no more than 3 minutes for one. Actually very filling as well, didn’t even finish the entire thing….hubby had no problems helping me out though!

    A breakfast that makes me smile from the name to the taste to the happiness of my belly full of PB and banana! Simple and cozy with its mix of soft insides and crispy edges. Yum.
