    This veggie bagel sandwich is a simple lunch that’s ready in no time.

    Just toast a bagel. Then top it with a slathering of homemade hummus and fresh, crunchy sliced vegetables.

    A chewy bagel with a creamy spread & crisp vegetables just hits the spot.

    This toasted bagel sandwich is topped with a generous schmear of homemade hummus, cucumber, onion, and bell pepper slices.

    It’s an ideal warm weather lunch when you don’t want to turn on the stove.

    But really, a bagel sandwich sounds good any time of year.

    I like to use crunchy vegetables in my bagel sandwich, so that it doesn’t get wilty if I’m not able to get to it right away.

    Sturdy cucumbers, onions, and yellow bell peppers all stand up to a healthy spread of hummus without withering.

    Hummus: Homemade hummus is easy to make, or you can use your favorite flavor of store-bought.

    Veggies: Crisp veggies like thinly sliced onion, bell pepper, and cucumbers work especially well here.

    Slice a bagel with a knife or bagel guillotine.

    Then pop it into the toaster, cut sides out, and use the bagel setting.

    Add the following to the toasted bagel:

    • Vegan feta cheese (straight out of the blender or baked)

    If you’re short on time or energy, use store-bought hummus, vegan cream cheese, or eggless mayo.

    Make a sandwich with any of these:

    • Pita
    • Tortilla – rolled like a wrap or pinwheel

    Are bagels vegan?

    Very often bagels are vegan! Make sure to check the ingredients on the bagels that you purchase as some of them aren’t vegan. They sometimes include an egg wash, cheese, or honey.

    Where can I find vegan bagels?

    You can find vegan bagels at natural grocery stores in the bread aisle.
    I’m a fan of the pretzel bagels at Trader Joe’s. Or you can pick up bagels from your favorite bagel place or even Bruegger’s.

      I LOVE bagel sandwiches—with hummus and pickles especially! We have a bagel shop nearby and they make vegan bagel hotdogs too so we go all of the time. The boys love it. I love making them at home too!
