A bagel sandwich is one of them!
A chewy bagel with a creamy spread & crisp vegetables just hits the spot.
This toasted bagel sandwich is topped with a generous schmear of homemade hummus, cucumber, onion, and bell pepper slices.
It’s an ideal warm weather lunch when you don’t want to turn on the stove.
But really, a bagel sandwich sounds good any time of year.
I like to use crunchy vegetables in my bagel sandwich, so that it doesn’t get wilty if I’m not able to get to it right away.
Sturdy cucumbers, onions, and yellow bell peppers all stand up to a healthy spread of hummus without withering.
Are bagels vegan?
Very often bagels are vegan!
Make sure to check the ingredients on the bagels that you purchase as some of them aren’t vegan.
They sometimes include an egg wash, cheese, or honey.
You can find vegan bagels at natural grocery stores in the bread aisle.
I’m a fan of the pretzel bagels at Trader Joe’s.
Or you can pick up bagels from your favorite bagel place or even Bruegger’s.

How to make a bagel sandwich
Here are the ingredients you’ll need.
Slice a bagel with a knife or bagel guillotine.
Then pop it into the toaster, cut sides out, and use the bagel setting.
Add the following to the toasted bagel:
- Bell pepper

It’s easy to tweak this recipe to suit your preferences & refrigerator staples.
Vary the veggies with any of these:
- Jalapeño slices
- Jarred artichoke hearts
- Sliced olives
- Pickled red onions
- Shredded carrot
- Thinly sliced seitan chicken or vegan deli slices
Instead of plain hummus, use any of these spreads:
- Kalamata olive hummus
- Buffalo hummus
- Sun-dried tomato hummus
- Dill pickle hummus
- Baba ganoush
- Jalapeño cashew cheese
- Vegan feta cheese (straight out of the blender or baked)
If you’re short on time or energy, use store-bought hummus, vegan cream cheese, or eggless mayo.

- 1 bagel
- Generous schmear homemade hummus or store-bought
- Several slices cucumber thinly cut
- Several slices onion thinly cut
- Several slices bell pepper
- Toast bagel in toaster on bagel setting.
- Slather a generous schmear of hummus onto each toasted bagel half.
- Fill with several slices of thinly cut cucumber, onion, and bell pepper.
