This vegan bagel sandwich is a simple lunch that’s ready in no time. Just toast a bagel. Then top it with a slathering of homemade hummus and fresh, crunchy sliced vegetables.
So far this “Veganuary,” I’ve shared 40 deliciously doable recipes for new vegans, a vegan egg salad sandwich for lunch in a rush, and chili cheese tater tots that utilize leftover chili in the most tantalizing of ways.
I’m continuing these fast and filling meals with today’s vegan bagel sandwich with hummus and vegetables.
This easy vegan bagel sandwich is topped with a generous schmear of homemade hummus, crisp cucumber, onion, and bell pepper slices. If you’re short on time or energy, store-bought hummus works too!
I like to use crunchy vegetables in my bagel sandwich, so that it doesn’t get wilty if I’m not able to get to it right away.
Sturdy cucumbers, onions, and red bell peppers all stand up to a slathering of hummus without withering.
If you have a ripe avocado on hand, a few slivers would also work well here. (Just remember to eat it right away, as avocado oxidizes when it comes into contact with air.)

Are bagels vegan?
Very often bagels are vegan!
Make sure to check the ingredients on the bagels that you purchase as some of them aren’t vegan. They sometimes include an egg wash, cheese, or honey.
I wrote about some of my favorite vegan bagels from Bruegger’s Bagels in this post. For today’s bagel I went with onion. But this sandwich is also great with rosemary olive oil or sun-dried tomato.
What to serve with it
Serve this bagel sandwich with chips and salsa, or a cup of creamy vegan tomato soup or vegan split pea soup.
Fast and filling bagel sandwich with hummus & vegetables
Ingredients
- 1 vegan bagel
- Generous schmear homemade hummus or store-bought
- Several slices cucumber thinly cut
- Several slices onion thinly cut
- Several slices bell pepper thinly cut
Instructions
- Toast vegan bagel in toaster.
- Slather on a generous schmear of hummus onto each toasted bagel half. Fill with several slices of thinly cut cucumber, onion, and bell pepper.

The shirt is from Herbivore Clothing, a vegan store & clothing designer in Portland, Oregon. I have their good luck elephant design on a couple of different shirts, and I wear them often. They’re super cozy and a great reminder that herbivores can be powerful. It was especially fitting wearing it this weekend, as Ringling Brothers announced they will be ending their circus. Such great news for animals!
Herbivore Clothing always switches up their colors and styles of shirts. Currently, the good luck elephant design is featured on a hoodie and a unisex sweatshirt.

I’m really excited to see this new film! Is it for the Twin Peaks festival like previous years? Or will it be debuting sooner?

Thanks, Susan! I’m so glad to hear that! It may or may not be submitted to the fest. It depends on how long the film ends up being after editing. The festival requirement is that entries are no longer than 5 minutes, but David isn’t sure if this one can be done in less than that. So if it goes longer, then he won’t submit it and will share it before the festival in July.

I LOVE bagel sandwiches—with hummus and pickles especially! We have a bagel shop nearby and they make vegan bagel hotdogs too so we go all of the time. The boys love it. I love making them at home too!

Yes, pickles are great on a bagel sandwich – or almost anywhere. Vegan bagel hot dogs? I never would have thought of that! So they just brown a hot dog and put it on a bagel?
