Refreshing celery & cucumber juice

Start the day with green juice! This celery and cucumber juice is hydrating and refreshing. Celery juice can be a little intense on its own. So I like to add cucumber, apple, and/or lemon to the mix. Vegan & gluten-free.

Celery juice is really having a moment! When I scroll through Instagram in the morning, I see picture after picture of bright green juice.

It’s followed by the hashtag #celeryjuice. (There are over 216,164 posts with that hashtag!)

Celery juice purists prefer to drink celery all on its own. However, I find it a lot more palatable when mixed with other produce like cucumber, apple, and lemon.

This celery cucumber juice recipe was inspired by a trip to Kansas City many years ago. We stopped at Café Gratitude, where they have several juices on the menu.

I had a juice called I Am Healthy. It was a blend of celery, cucumber, kale, and lemon juice.

(I leave out the kale when I make it at home, because my juicer isn’t really up to the challenge of leafy greens. It wastes too much of it to be worth my while.)

At Cafe Gratitude, they also offer the option of adding apple to the mix. When I had it at the restaurant, I didn’t go with the optional apple. And I’ve made it both ways at home – with apple and without.

I greatly prefer it with the apple. Adding one apple gives mild sweetness and mellows the intensity of celery. But if you’d prefer to go without apple, then I suggest adding more lemon juice at the end.

How to make celery and cucumber juice

Rinse celery stalks, cucumber, lemon, and an apple if you’re using it. Cut the lemon into wedges, and core the apple.

Press the celery, cucumber, and apple (if using) through the juicer chute.

Pour the beverage into two small glasses.

Squeeze a wedge of lemon into the drinks. Add a little lemon at a time, tasting along the way, until you have the right balance of acidity & tartness with the celery and cucumber.

(If you’re using apple, you’ll likely want less lemon juice. My husband prefers to leave the lemon juice out altogether with apple.)

This refreshing and hydrating drink is a good way to sneak in some vegetables first thing in the morning.

Refreshing celery & cucumber juice with lemon

While celery juice is popular to drink on its own, I like to add cucumber and lemon for a milder flavor. To make it even more inviting, add an apple to the mix! This green juice is a great way to start the day and sneak in some vegetables early. 
This makes 2 small glasses or one full-sized glass.

Ingredients

  • 1 medium to large cucumber
  • 6 small stalks celery ends removed (or 3 large stalks)
  • 1 apple cored (optional but recommended)
  • 1 lemon cut into wedges (or to taste)

Instructions

  • Juice cucumber and celery in a juicer. If using, juice the apple as well.
  • Pour into 2 glasses and add squeezes of lemon wedges to taste. (If you're adding the optional apple, you may prefer no lemon at all.)

Notes

If the celery flavor is too intense for you, add a splash of cold water and/or serve on ice.
The calories listed are with the optional apple.

      Peeling is not necessary. If for some reason you’d prefer to then you can, but I never do.

    I just made this today with my juicer. I didn’t use the lemon or the apple. Just straight cucumber and celery juice and it was really good. This will be a must have nowadays

    I have celery and cucunbers in my garden and on a whim, I decided to juice them. Adding the apple with no lemon is the way I like it. Thank you for the recipe.

    Can you make this the night before or does it have to enjoyed within a certain time?

      You can definitely make it the night before. The juice will likely separate a little overnight. So just give it a stir before drinking.
