Sweet potato smoothie with mango & cinnamon
A great way to use up any leftover baked sweet potatoes. And once it becomes one of your favorite smoothies, you’ll want to bake a few extra to keep in the fridge, ready to go!
Makes 2 small smoothies or 1 large smoothie

Ingredients

cup
frozen mango chunks
½
cup
chopped cooked sweet potato
1
teaspoon
cinnamon
½
cup
pineapple juice
¾
cup
water
½
teaspoon
vanilla extract
1
teaspoon
agave syrup
or maple syrup, optional
Instructions
Place all the ingredients in a blender and blend on high until smooth and creamy.
Pour into glass(es) and serve immediately.
Notes
For easiest blending, add all of the liquid ingredients to the blender first.
Keep any leftovers in a covered container in the refrigerator. It will last for about 3 days.
