Sweet & spicy watermelon salsa with jalapeño & lime
Your pool party called, and it wants a bowlful of this watermelon salsa, please! This fresh and fruity dip combines juicy watermelon, spicy jalapeño, tangy lime, and a hint of optional Tajín seasoning. Serve with tortilla chips for an easy, crowd-pleasing summer appetizer.
Put the watermelon, onion, jalapeño pepper, cilantro, lime juice, and salt into a mixing bowl and combine with a spoon.
If you like, transfer the salsa to a serving bowl, or leave it in the mixing bowl. To intensify the lime flavor, garnish the top of the salsa with a generous sprinkling of Tajin (optional). Serve with tortilla chips for dipping.

Make-ahead tip: Watermelon salsa is best served fresh, but if you’re prepping it in advance, wait to add the salt and Tajín until just before serving. Both ingredients draw out moisture, which can lead to a watery salsa and softer watermelon.Storage instructions: Store the salsa in an airtight container in the refrigerator. It will keep for 2 or 3 days. Before serving, drain off any excess liquid using a fine mesh sieve. If you haven’t already, add the salt, gently toss to combine, and sprinkle with Tajín to garnish.
