    What vegans eat: Easy veggie meals

    It’s time for another installment of What Vegans Eat. In this series, I share my easy veggie meals from one ordinary day. Today I’m sharing breakfast, lunch, and dinner from this past Saturday…

    Easy veggie meals

    I had such a fun weekend! It feels like spring is finally here, and I was able to get out and really enjoy it. Saturday was the first day of the farmers market, and that always makes the end of winter feel official.

    Breakfast:

    Tofu scramble, roasted potatoes, and blackberries on plate.

    Before the market, while I had coffee and cuddled Jezebel, David made breakfast.

    He whipped up a tofu scramble with bell peppers, onions, garlic, mushrooms, and kale. On the side, roasted potatoes and blackberries.

    The next day we stuffed the leftover scramble and potatoes into breakfast burritos.

    Oftentimes after a particularly cold winter, there won’t be much at that first farmers market – just some plants, baked goods, and jams.

    However, this year winter was mild, and there was plenty to buy. It makes me excited about the weeks to come when more and more fresh produce pops up.

    You can really taste the freshness in food from the farmers market. Not only does it pop with flavor, it also lasts longer in the refrigerator if you don’t get to it right away, because it didn’t spend any time on a truck or grocery store shelf.

    We picked up a couple bags of spinach, two bunches of asparagus, and chives.

    Lunch:

    For lunch, the easy veggie meals continued with this roasted asparagus, romaine lettuce salad, and buffalo cauliflower. I drizzled it with Follow Your Heart ranch.

    After lunch we went on a long hike, did some work around the house, and then decided to grill out for dinner.

    Dinner:

    David and I have different opinions on the best veggie burger for grilling. He likes the Gardein beefless burger, and I’m all about the Field Roast hand formed burger (above).

    I like the juicy, fatty quality of the burger and the way it gets a little crisp around the edges when it grills. David loves the chargrilled flavor of the Gardein burger. We make this work by getting both kinds of burgers, and then we can each have the one we prefer.

    On the side, we had tortilla chips, and I made salsa and guacamole to go with it.

    I have to share one more highlight from the weekend.

    On Sunday, we got a new piece of cat furniture for the kitties. We barely made it inside the front door before they claimed it. I think it’s a hit!

      The kitties look so pleased with themselves!

      I had the Field Roast burger last year in the US, and I really liked it. Field Roast has just become available in Australia now, but not in my state yet, and I am not sure if they have the burgers here.
      I did recently buy some Gardein beefless burgers to try, though I have not been a fan of Gardein chicken products so I am a bit suspicious. However after Fry’s stopped selling their burger patties here, it is one of the only ‘meaty’ veggie burgers available.

        The kitties certainly do. They had no doubt that it was their furniture. 🙂

        If you don’t like the Gardein chicken line, I’m dubious that you’ll like the burgers too. It’s all in the same wheelhouse, and I think the Gardein breaded chicken & fish products are their best offerings. I’ll be curious to hear what you think!

      yum! I love that David cooks you yummy tofu scrambles. Next time you come to California, he can give Musty a cooking lesson, ha ha! I totally agree about the joy of farmers market food. I’m lucky that i can buy about 95% of my produce from the farmers market all year long. It makes such a difference.

      I haven’t tried the Gardein Burgers yet! I’ve tried the Field Roast Burgers and the Beyond Meat Burgers, both of which I really liked. I’ll try the Gardein ones next time!

        It’s a date! David and Musty can cook tofu scrambles while we take the pups on their morning walk.

        That is so lucky that you can buy 95% of your produce from the farmers market all year ’round. I would love that. Whenever the farmers market starts up in the spring, I’m always so happy to see it. When it goes away at the end of October, it’s a bit sad. You can definitely taste food at its height of freshness. Plus, it’s rewarding to develop a relationship with your farmers.

        I haven’t tried the Beyond Meat burgers yet. I’ve tried a couple of their other products, which I thought were just okay. So I’ve been hesitant to spend the money on their burgers, since they’re on the pricy side. Knowing that you like them, I’ll have to give them a shot sometime this summer.

      That certainly looks like a delicious day — every meal looks colorful and delicious! I still haven’t made buffalo cauliflower, and I can’t imagine why. I think I’ll show the recipe to my husband — I’m pretty sure he’ll be inspired to make it immediately. 😀 The cat tree is excellent. If I were a cat, I’d absolutely want one in front of every window.

        Yes, you should absolutely have Ken make the buffalo cauliflower. It’s also a fun party appetizer. When we’ve served it to non-vegans, it went over like gangbusters.

      Kitties!!! Yay! I’m with you on that Field Roast burger. The Gardein one is good — really good. But nothing can top the juicy Field Roast burger! I haven’t tried one on the grill yet, but I need to do that this Memorial Day!

      I agree with you – Field Roast Hand Formed Burgers are by FAR the best pre-made burger patties. SO GOOD. We recently tried the Upton’s burgers and were pleasantly surprised by their tastiness.

        Yes, I thought the Upton’s burgers were tasty too. The flavor was in the same wheelhouse as their other seitan products.

        Thanks! I love potatoes any time of the day, but there is something extra special about potatoes for breakfast. There was certainly no doubt in Jezebel or Avon’s minds that the furniture was for them. 🙂
