Every week in my CSA pick-up, I bring home an armload of fruits and veggies. It's always a fun challenge to play "recipe Tetris" and figure out how everything will fit into my meals (and fridge).
But sometimes, that produce bin fills up fast. Suddenly I’m looking for quick ways to use things up while they're still fresh.
Juicing to the rescue!
Lately, I’ve been enjoying ABC juice, which is a blend of apples, a beet, and carrots. It has an earthy, sweet flavor from natural sugars that goes down smooth.

Here are the ingredients you will need to make this recipe.

Apples: Pink Lady apples are my favorite for this recipe, because they're lightly sweet with a bright flavor. But any apples will work here – including Fuji, Gala, Honeycrisp, or Granny Smith for a bit of tartness.
Whatever you choose, be sure to core the apples before juicing.
Beet: Look for a firm, medium-sized beet (also called beetroot) with smooth skin and deep red color.
Carrots: Choose fresh, firm carrots in your choice of colors. Large carrots work best to yield enough juice. Plus, they provide a nice balance for the beet’s robust flavor.
When possible choose organic, especially if you’re not peeling the fruits and veggies.

How to make ABC juice

- Rinse and scrub the carrots, beet, and apples. (There’s no need to peel, unless that’s your preference.) Core the apple, and discard the core with seeds.
- Depending on the size of your juicer’s chute, you may need to cut the produce down into smaller pieces. However, my Breville compact juicer works best if the produce is whole or in large pieces, so use your judgment.
- Press the fruits and vegetables through the juicer chute.
- Pour it into a glass over ice. If you’d like to reduce the sweetness or minimize the beet flavor, add cold water to taste.
Make it your own
You can make this apple beet carrot juice recipe your own by varying the ingredients and/or amounts:
- Add ½ to 1 inch of ginger root for zing
- Add a squeeze of lime or lemon juice for acid
- Add ½ of a cucumber, celery rib, or cool water for a more muted beet flavor
- For more sweetness, add more apple
- For more earthy flavor, add more beets or carrots
Storage
For best results, enjoy the apple beet carrot juice right away.
However, if necessary, it can be stored in an airtight container in the refrigerator for up to 24 hours. Give it a stir before serving, as there may be some separation.

ABC juice (apple, beet, carrot juice)
Ingredients
- 1 medium-sized beet
- 2 large carrots
- 2 small apples cored, or one large apple (Pink Lady is my favorite)
- Water to taste (optional)
Instructions
- Scrub the beet, carrots, and apple. (I don't peel them since there are a lot of nutrients in the skin. That's a good reason to choose organic, if you can.) Core the apple, and discard the core with seeds. Depending on the size of your juicer's chute, you may need to cut the beet, carrots, and apple down to fit through it. (My Breville compact juicer works better if the fruit & vegetable pieces are pushed through whole or in large chunks.)
- Press the beet, carrots, and apple through the chute of the juicer.
- Pour the juice over ice in a glass and take a sip. If you'd prefer to mellow the sweetness and/or earthy beet flavor, add cold water to taste. (This is especially helpful if you're new to beet juice.)
