    Jasmine 26: Vietnamese delights in Minneapolis

    I’m winding up our visit to Minneapolis with a re-cap of our dinner at Jasmine 26, a vegan-friendly Vietnamese restaurant. The ambience at Jasmine 26 is serene & darkly lit.

    They have V and GF notations on their menu for vegan & gluten-free options.

    I ordered the Jasmine Crepe (Bánh Xèo).

    The crispy turmeric rice coconut crepe was filled to brimming with stir-fried tofu, mock duck, bean sprouts, onion, and yellow mung beans. Alongside it was a mound of cool lettuce, cucumber, mint, and pickled carrot.

    I stuffed the crunchy, cold vegetables into the crepe with every bite for a variety of textures and temperatures.

    I rarely have fresh mint outside of drink garnishes. But it added a wonderful dynamic in this dish. It made the dish feel totally unique in comparison to my usual dinners.

    David ordered the basil noodles (Bành Phỏ Xào), prepared vegan. (It typically comes with chickens’ eggs in the dish.)

    The wide stir-fried rice noodles were covered with pea pods, carrots, and green onions. He also added tofu for an additional charge to the full-flavored dish.

    We don’t have any vegan friendly Vietnamese restaurants in our town. So it was a wonderful change of pace from our typical options.

      Everything looks so good, I would have had a hard time deciding what to pick. I like your method of choosing based on how difficult it is to make, I’m going to have to put that method to use the next time I have to decide. The crepes look delicious.

        It’s always fun to indulge in something that would be arduous and time consuming to make at home! I seem to appreciate a dinner so much more when I know how much energy it would take to achieve it.

      Always good to hear about non-vegan places that don’t treat vegans like an inconvenience. I’d have been all over that crepe like nobody’s business!

        Asian noodle dishes are one of my weaknesses too! (Italian noodle dishes I can take or leave.) I’d love to explore more of their menu the next time we’re in town.

      This looks so good! I like your style of choosing what to eat based on how difficult it would be to make at home. I’m definitely going to have to employ this method next time I have trouble deciding between dishes. I think I would have also gone with the Vietnamese crepe as well. We’ve made it at home, but I can never get the sauce quite right.

      This all looks so good! The only time that I’ve been in Minneapolis is while on a layover, so I may just have to dedicate a trip to checking out the vegan eats!

        Minneapolis is a fun city and it has a beautiful skyline. Maybe you can combine it with a Michigan trip some year… and of course, you’ll have to stop by Iowa while you’re in the area! 🙂

      Minneapolis is one one my favorite places to visit for food! Did you make IUCN Ecopolitan? That’s my favorite restaurant in the US!

        I went to Ecopolitan in May, but we didn’t make it there this visit. I was tempted, but it was so chilly that it was hard to think about having a raw meal! I had the taco pizza and a really terrific juice when I went last spring. What’s your favorite thing to order there?
