This vegan avocado toast recipe is topped with baked tofu and a sprinkling of nutritional yeast flakes. It’s a hearty breakfast that will keep you going until lunchtime.

You know I’m a fan of ridiculously easy vegan breakfasts. (Here’s a round-up of easy vegan breakfasts that anyone can make.)

I’m also a savory breakfast fan through and through. I don’t feel like the day has really started until I’ve had something substantive.

So here’s another easy vegan breakfast idea that is rife with options – open faced vegan avocado toast with baked tofu.

This simple breakfast recipe uses baked tofu, a sprinkling of nutritional yeast flakes, avocado, and a piece of toast. This delicious start to the day has a hit of protein and fat to keep me going until lunchtime.

You have lots of tofu options…

For the tofu portion of this recipe, use any baked tofu you like.

Even though it costs more than baking your own, lately I’ve been purchasing packages of baked tofu slabs. They’re so easy for a really quick protein-packed snack, putting on top of salads, or cutting into squares, air frying, and using on a stir-fry.

(They’re also great for road-trips, as I mention in this post on how to eat vegan while traveling.)

Teriyaki flavor and sriracha flavor from Trader Joe’s are the types I used in this post. They’re two of my favorite vegan Trader Joe’s products.

I’m also a fan of the Wildwood savory flavor, which may be the same as the Trader Joe’s teriyaki, just re-packaged.

Eggy tofu would also be delicious on this toast as more of an open-faced breakfast sandwich. Just brown a couple of thin slices, and you’re good to go.

Or you could make a batch of this baked tofu recipe with lemon and rosemary. You could use a slice or two on this toast. And then use the remaining slabs of tofu for other recipes throughout the week like baked tofu & kale chip Buddha bowls or spring roll-inspired vegan wraps.

Don’t forget the nooch

A sprinkling of nutritional yeast takes already mouthwatering avocado toast and bumps it up a notch.

Don’t forget to give a spoonful of nutritional yeast to the cats, or prepare yourself for even more dirty looks from them than usual.

A shake of Everything But the Bagel seasoning from Trader Joe’s is also a tasty addition to avocado toast.

What kind of bread is vegan?

People ask me sometimes about how to find vegan bread and what kind of bread is vegan.

Lucky for me, the co-op where I shop has an amazing bakery. And they use the same ingredients I would buy at the store. So it’s basically just as good as homemade bread, except I don’t have to do any of the baking.

Most of the bread they sell is vegan, because the ingredients are just things like flour, salt, water, and yeast. If you have a bakery in your area, check it out.

However, if you don’t have access to a bakery that makes loaves from scratch, visit a natural grocery store. That’s a great place to look for vegan packaged breads.

Lately, we’ve been getting Silver Hills Sprouted Bread and Dave’s Killer Bread. Alvarado St. Bakery also has vegan options. So does Ezekial 4:9 if you don’t mind a drier bread.

Make sure to read the ingredient list before purchasing, of course, to insure the type/flavor you’re buying is vegan. Especially keep an eye out for honey, since it has a way of sneaking into natural breads.

This hearty vegan avocado toast is topped with a sprinkling of nutritional yeast flakes and savory baked tofu. It's a filling & substantive breakfast that will keep you going until lunchtime.

Ingredients

  • 6 ounces baked tofu
  • 4 slices bread
  • 1 avocado sliced & pit removed
  • 1/2 teaspoon nutritional yeast flakes divided

Instructions

  • The tofu can be served on the avocado toast either warm or cold. For cold tofu, simply cut it into slices.
    If you'd prefer it heated, you can warm it in the air fryer by putting the whole slabs in the air fryer and cooking at 400 degrees for 5 minutes, stopping once to flip.
    If you don't have an air fryer, you could heat the tofu in a skillet for a few minutes on each side. After it is warm, remove the tofu from air fryer or skillet, and cut the tofu in thin slices.
  • Toast bread in the toaster. You can go lighter on the toppings and make 4 avocado toasts, or you can go heavier on the toppings and make 2 avocado toasts. So toast the amount of bread that you need, depending on your preferences.
  • Once the bread is toasted, top each slice with avocado, and smash it onto the bread with a fork. Sprinkle 1/8 teaspoon of nutritional yeast flakes on top of the avocado on each piece of toast. Top with sliced tofu and serve.

Notes

Everything But the Bagel seasoning is also a delicious addition to avocado toast. Add it at the same time as the nutritional yeast flakes.

    Alas, none of my cats have ever had any interest in nutritional yeast.

      Tofu really amps avocado toast up into a hearty breakfast! That’s too bad that none of your cats have had an interest in nutritional yeast. Mine have a Pavlovian response whenever they hear the jar opening. 😀
