And just like that, 2018 is coming to a close. I’m taking a look back at my 18 most popular vegan recipes from the year. 5 can be made in the air fryer, 3 feature jackfruit, 2 are soups, and 1 is a cocktail.
Popular vegan recipes
Fried artichoke hearts with vegan aioli
Coming in at the top spot on my list of popular vegan recipes are fried artichoke hearts made in the air fryer. Artichokes are one of my all-time favorite foods.
This recipe takes briny jarred artichoke hearts and turns them into crispy finger food, perfect for dunking. Serve them with garlic and lemon aioli.
Here’s what reader Janis had to say about them, “These were so easy to make and VERY delicious! What a fun and different appetizer to serve my guests!”
Vegan chili dog: When only a coney will do
When you need something cozy & filling, look no further than a vegan chili dog.
This smoky meatless dog is topped with three bean chili, a sprinkling of non-dairy cheese, pickles, and grainy mustard.
Vegan BBQ Soy Curls & BBQ sandwich with coleslaw
Smoky sweet and crispy around the edges, here’s some vegan barbecue you can really sink your teeth into. These vegan BBQ Soy Curls can be made in the air fryer or skillet.
Or they’re also divine piled onto a bun as a hearty vegan BBQ sandwich. Top it with crunchy coleslaw for an enticing mix of textures and temperatures.
Here’s what reader Becky had to say about these BBQ Soy Curls, “These Soy Curls are seriously easy and so delicious! I made them in my air fryer, and I’m addicted!”
Another reader who is also named Becky said, “I have made this recipe so many times in my air fryer. The first time I soaked them in water because that’s all I had to work with. I just reread the recipe and realized I’ve never shredded them and I don’t shake them during the 5 minutes and they’ve turned out delicious every time!!! Sometimes I make extra for niece to take to work with her and she reheats them in the microwave and she says they are still amazing!!! Thank you for the super easy amazing delicious recipe!!!”
Laura said, “I am new to the vegan lifestyle so I knew nothing about Soy Curls. Soy Curls, where have you been all my life? The recipe was easy. I used my air fryer, and the Soy Curls came out crispy, which was wonderful! I made sandwiches with the BBQ Soy Curls, toasted gluten free bread, and coleslaw. It was really easy and so good. This recipe is a keeper.”
Lucy said, “I didn’t find any Soy Curls when we were stateside last month, but I was able to order some online and this was the first recipe I made with them. Yum! We had it with mashed potatoes and sautéed chard. Will definitely make again. Love the idea of having this with mac and cheez too!”
Soothing vegan potsticker soup
I always have a bag of potstickers or gyoza in the freezer. (They’re one of my longtime favorite vegan Trader Joe’s products.) Potstickers are an easy side dish for stir-fry, or a tasty no-fuss snack.
But when you want to stretch them out into a soothing, full meal, use them for vegan potsticker soup. This soup is loaded with onions, garlic, kale, and carrots.
Reader Sharon said about vegan potsticker soup, “I made this last night, and it was a big hit with my family. It was the perfect dish on a chilly and rainy night. I left out the celery and added a few sliced mushrooms. I’ve never seen my toddler eat something so eagerly! He kept asking for more. Good job!”
Sarah said, “We made this on Tuesday, and it was delicious!!! We doubled it, because we are voracious eaters! Virtually none left over! Delicious recipe – such a creative idea!!!”
Angela said, “Made this today for the first time, and it was delicious! Thank you so much for sharing the recipe.”
Vegan burrito bowl with lentils & black beans
This vegan burrito bowl gives a tantalizing mix of flavors – spicy lentils, black beans, guacamole, and pico de gallo. It’s great for a hearty weeknight meal or filling lunch.
Reader Meredith said, “Thank you for this! I was able to make this fairly quickly tonight for dinner. Substituted some salsa (peach mango habanero) for the pico as the store near me did not have any pico, but otherwise I followed the recipe. Very tasty! I will be using the lentil taco ‘meat’ for future bowls I am sure!”
Air fryer bagel pizza: 10 minute lunch recipe
Feel like a kid again when you make air fryer bagel pizzas.
Add your favorite toppings to a sliced bagel, pop it in the air fryer, and lunch is ready in just ten minutes!
The best vegan chili cheese dip
This vegan cheese dip is a terrific way to repurpose that leftover chili in the refrigerator. Add it to the mix with seitan chorizo, and creamy cashew queso.
Serve it with chips, and watch it disappear.
Vegan chili cheese dip is terrific on its own or served as part of a build-your-own vegan nacho bar.
Air fryer eggplant dip (vegan baba ganoush recipe)
Baba ganoush is a lot like hummus, but made with eggplant instead of chickpeas.
Usually making baba ganoush requires a lot of time cooking the eggplant in the oven or grill. But homemade baba ganoush just got a whole lot faster by using the air fryer. Smoky, garlicky air fryer eggplant dip is ready to serve in just 25 minutes.
I like to serve it with toasted pita and sliced vegetables for dipping.
By the way, I also include oven directions if you don’t have an air fryer amongst your kitchen accessories.
Reader Sam said, “This was the first recipe I did with my new air fryer. It went great! Your excellent pictures made it super easy to follow the instructions, and it tasted delicious! Thanks for sharing!”
Vegan corn cakes: Gluten-free breakfast
If popcorn & pancakes got together, they would taste like these vegan corn cakes. Naturally gluten-free, they make a delicious addition to breakfast or brunch.
Serve them on their own or with a vegan tofu scramble on the side.
Cranberry mimosa: A festive & easy holiday cocktail
I served this cranberry mimosa at our Friendsgiving last year, but it would fit well with any winter holiday celebration.
It’s made with just three ingredients and is impossible to mess up.
Reader Patti said, “These are so good!”
Creamy vegan tomato soup
Through my late teens and early twenties, grilled cheese and creamy vegan tomato soup was a regular lunchtime occurrence. After I went vegan, that mainstay got the shove. But no longer!
These days, I prefer to make my soup from scratch. It gets extra depth and body from sun-dried tomatoes and cashew cream.
Serve with a toasted non-dairy grilled cheese on the side for dipping, or pop in a handful of homemade vegan croutons.
Chicken-style vegan pot pie (Using frozen pie crust!)
This chicken-style vegan pot pie is a revamp from my mini vegetable pot pie recipe. The original version was for personal-sized pot pies with a homemade crust and chickpeas as the protein-packed star.
This new version uses frozen pie crusts as a time saver, and seitan instead of beans. The rest of the filling is made with potatoes, carrots, celery, peas, and a cashew cream sauce.
This year for Christmas, I made the filling ahead of time, and then brought a pack of frozen crusts with me to our family gathering at my parents’ house.
About an hour before dinner, I put the crusts out to thaw. Then when they were ready to go, I poured in the prepared filling, put on the top crust, and popped the whole thing in the oven.
Got to love a holiday meal that let’s you do most of the work ahead of time. After all, who wants to cook on Christmas? Not me!
Vegan taquitos with jackfruit – air fryer or oven!
2018 is the year I really fell in love with jackfruit. While there have been some wins in the past, usually I would choose seitan over jackfruit. However, this year I really embraced the fruit that can also be a meaty filling in tacos, sandwiches, and taquitos.
These vegan taquitos are made with jackfruit carnitas – seasoned with spices, onions, garlic, and red wine. They can be made in the air fryer or oven.
Serve them with guacamole, salsa, or cashew queso for dipping.
Reader Chris said, “Vegan taquitos? YES please. It’s easy to follow, easy to prepare, and even easier to devour. I’d definitely make over and over again.”
Vegan walking tacos for potlucks & parties
Do you want to add more movement to your life in 2019? But you also want to make sure there’s time for tacos? Get multi-tasking with these walking tacos! Haha!
Vegan walking tacos are a potluck & party favorite. They’re made by piling lentil taco meat onto Fritos-style corn chips, along with tomatoes, lettuce, non-dairy cheese, and guacamole.
A serious crowd pleaser for adults & kids alike!
Vegan French dip sandwich with au jus
Of all the recipes I made in 2018, this vegan French dip sandwich is my favorite.
Savory, wine infused jackfruit is piled onto ciabatta and topped with sautéed onions and horseradish mayo. And of course, it wouldn’t be a French dip without a full-bodied au jus for dunking.
Reader Jodi said, “I made this tonight, and it is spectacular! I followed the recipe exactly (the instructions are very easy to follow). Although I had to substitute sourdough bread since I couldn’t find ciabatta. It was amazingly delicious and we devoured it in record time. Probably my husband’s favorite meal in the six years since we went vegan.”
Chris said, “This recipe was amazing. It’s been years since I’ve had a French Dip. This vegan option was a 10/10. Wish I could make this every night! Super easy ingredients, well put together recipe, amazing taste.”
Tracy said, “These were amazing beyond words! Absolutely scrumptious! My boyfriend and I each had 2 and he said he’d like 12 more because they were so good. Thank you for this recipe!”
Chris C. said, “cadry! i made this tonight and IT. BLEW. OUR. MINDS. it was amazing! by far, the tastiest sandwich i’ve ever made. the au jus plus the horseradish mayonnaise and finally the outstanding jackfruit ‘roastbeef’ = heaven. seriously, this is crazy good!”
Vegan pesto rice in under 10 minutes
For vegan pesto rice, I like to use pre-cooked frozen brown rice. Simply warm the rice and toss it with cilantro basil pesto.
Then use it as a side dish. Or make it the base of a bowl with roasted chickpeas, artichoke hearts, and olives.
Vegan breakfast sandwich with eggy tofu & sausage
Once upon a time, I’d go through fast food places on the regular for a sausage biscuit. But these days I can easily make a portable, delicious, and cruelty-free version by toasting a bagel and topping it with eggy tofu, non-dairy cheese, and a veggie sausage.
This vegan breakfast sandwich is great for a meal on the go. Or jump back in bed and enjoy it in your PJ’s.
Reader Patti said, “These breakfast sandwiches are fantastic! A favorite of my whole family since I first tried them this summer. The black salt is a true game changer!”
Jackfruit carnitas tacos with red wine
Finishing the list of popular vegan recipes are these savory jackfruit carnitas tacos.
The jackfruit is infused with the flavors of red wine, cumin, ancho chili powder, and coriander. Then the jackfruit carnitas are piled into crisp corn shells with lettuce, tomatoes, and guacamole. So good!
Reader Becky said, “CADRY! These are so good, and using wine in the mix was a great idea. I love a boozy taco!”
