This vegan bagel sandwich is a simple lunch that’s ready in no time. Just toast a bagel. Then top it with a slathering of homemade hummus and fresh, crunchy sliced vegetables.
So far this “Veganuary,” I’ve shared 25 deliciously doable recipes for new vegans, a vegan egg salad sandwich for lunch in a rush, and chili cheese tater tots that utilize leftover chili in the most tantalizing of ways.
I’m continuing these fast and filling meals with today’s vegan bagel sandwich with hummus and vegetables.
An easy lunch when you’re short on time
On Friday we shot for a few hours, and then we spent Saturday gathering more props, setting up the basement for a larger shoot with a few other actors, and getting snacks for “craft services.”
(That meant a little workout for the air fryer – tater tots and potstickers, along with chips, salsa, and guacamole. I know I made at least one air fryer convert out of the event!)
We were shooting until 2 in the morning, which is waaaaay past my usual bedtime.
So even though call time the next day wasn’t until 11 am, it came a lot earlier than usual. That day we were shooting at a warehouse. I needed to be out the door fast after a quick shower and blow dry.
Luckily, I’d made a batch of hummus the day before. So I was able to whip up a portable lunch in 5 minutes.
Vegan bagel sandwich
This easy vegan bagel sandwich is topped with a generous schmear of homemade hummus, crisp cucumber, onion, and bell pepper slices.
I like to use crunchy vegetables in my bagel sandwich, so that it doesn’t get wilty if I’m not able to get to it right away.
Sturdy cucumbers, onions, and red bell peppers all stand up to a slathering of hummus without withering.
If you have a ripe avocado on hand, a few slivers would also work well here. (Just remember to eat it right away, as avocado oxidizes when it comes into contact with air.)

Are bagels vegan?
Very often bagels are vegan!
Make sure to check the ingredients on the bagels that you purchase as some of them aren’t vegan. They sometimes include an egg wash, cheese, or honey.
I wrote about some of my favorite vegan bagels from Bruegger’s Bagels in this post. For today’s bagel I went with onion, but this sandwich is also great with rosemary olive oil or sun-dried tomato.
