This veggie bagel sandwich is a simple lunch that’s ready in no time.

Just toast a bagel. Then top it with a slathering of homemade hummus and fresh, crunchy sliced vegetables.

    Perfect for on the go!

Hands holding bagel sandwich over plate.

Some things are perfect in their simplicity.

A bagel sandwich is one of them!

A chewy bagel with a creamy spread & crisp vegetables just hits the spot.

This toasted bagel sandwich is topped with a generous schmear of homemade hummus, cucumber, onion, and bell pepper slices.

It’s an ideal warm weather lunch when you don’t want to turn on the stove.

But really, a bagel sandwich sounds good any time of year.

I like to use crunchy vegetables in my bagel sandwich, so that it doesn’t get wilty if I’m not able to get to it right away.

Sturdy cucumbers, onions, and yellow bell peppers all stand up to a healthy spread of hummus without withering.

    Are bagels vegan?

    Very often bagels are vegan!

Make sure to check the ingredients on the bagels that you purchase as some of them aren’t vegan.

They sometimes include an egg wash, cheese, or honey.

You can find vegan bagels at natural grocery stores in the bread aisle.

I’m a fan of the pretzel bagels at Trader Joe’s.

Or you can pick up bagels from your favorite bagel place or even Bruegger’s.

(See what your options are in my post on vegan fast food. Rosemary olive oil, onion, sun-dried tomato, or everything bagels are my top picks!)

    Ingredients

Here are the ingredients you will need to make this recipe.

Labeled ingredients for a hummus bagel sandwich.

Bagel: To keep this sandwich vegan, look for bagels that are made without egg wash, dairy-based ingredients like cheese, or honey.

Hummus: Homemade hummus is easy to make, or you can use your favorite flavor of store-bought.

Veggies: Crisp veggies like thinly sliced onion, bell pepper, and cucumbers work especially well here.

    Step by step instructions

Here’s how to make this recipe at a glance. For complete ingredient amounts & instructions, keep scrolling to the recipe card below.

Slice a bagel with a knife or bagel guillotine.

Then pop it into the toaster, cut sides out, and use the bagel setting.

Add the following to the toasted bagel:

    • Hummus
    • Cucumber
    • Onion
    • Bell pepper

    Make it your own

It’s easy to tweak this recipe to suit your preferences & refrigerator staples.

Vary the veggies with any of these:

    • Pickles
    • Jalapeño slices
    • Jarred artichoke hearts
    • Sliced olives
    • Avocado
    • Tomatoes
    • Pickled red onions
    • Shredded carrot
    • Sprouts
    • Spinach
    • Romaine
    • Thinly sliced seitan chicken or vegan deli slices

Instead of plain hummus, use any of these spreads:

    • Kalamata olive hummus
    • Buffalo hummus
    • Sun-dried tomato hummus
    • Dill pickle hummus
    • Baba ganoush
    • Jalapeño cashew cheese
    • Vegan feta cheese (straight out of the blender or baked)

If you’re short on time or energy, use store-bought hummus, vegan cream cheese, or eggless mayo.

    All out of bagels?

Make a sandwich with any of these:

    • Sandwich bread
    • Sourdough
    • Baguette
    • Pita
    • Tortilla – rolled like a wrap or pinwheel
Table with bagel sandwich, potato chips, and ingredients.

    What to serve with it

This bagel sandwich can be a full meal on its own.

Or serve it with something simple like potato chips or tortilla chips & salsa.

Or serve it with any of these side dishes:

    • Baked fries
    • Vegan coleslaw
    • Potato salad
    • Creamy vegan tomato soup
    • Beer battered fried pickles
    • Air fryer kale chips (or oven baked)

I LOVE bagel sandwiches—with hummus and pickles especially! We have a bagel shop nearby and they make vegan bagel hotdogs too so we go all of the time. The boys love it. I love making them at home too!

It’s true. Bagels & hummus are welcome anytime as far as I’m concerned.

Bagel sandwiches are the best! They’re so much more fun than standard, run of the mill sandwiches. 😀

I love this! Quick, healthy lunches are something I struggle with. It’s so easy to work through lunch or eat something garbagey when I’m strapped for time.
