Vegan risotto

Creamy vegan risotto wows every time. Mushrooms, sausage, and arborio rice are bathed in an ultra creamy cashew sauce.
Perfect for your Easter feast, it's endlessly luxurious - bite after bite.
Serving suggestions: roasted fennel with vegan parmesan, air fryer radishes with vegan parmesan, or asparagus fries
Vegan arancini

If you want all of the flavor of arancini but with a crunchy crust, make vegan arancini.
This impressive main course is made with cold risotto that's formed into balls, rolled in panko breadcrumbs, and baked or air fried.
With a crisp exterior and warm melty inside, they're absolutely dreamy.
Serving suggestions: avocado caprese salad, air fried asparagus, or sauteed kale with garlic
Vegan ham with pineapple brown sugar glaze

This vegan Easter menu idea is all about shortcuts! Give store-bought vegan ham roast a glow-up with a pineapple brown sugar glaze.
Topped with broiled pineapple slices and maraschino cherries, this glazed vegan ham makes Easter a little more fun and kitschy.
Serving suggestions: oven roasted Brussels sprouts with apples, vegan mashed potatoes, or air fryer mushrooms with garlic & herbs
Vegan chicken pot pie

Vegan chicken pot pie is one of my favorite holiday offerings, because it’s a complete meal in a pie dish.
Loaded with carrots, onions, celery, peas, and chicken-style seitan, the pot pie filling is enveloped in a creamy cashew sauce.
Serving suggestions: roasted lemon cauliflower, smoky sweet vegan collard greens, or crispy air fryer summer squash
Mini vegan pot pie

For something on the personal side, treat your guests to their own mini vegetable pot pie.
As delicious as it is adorable, this main course is filled with chickpeas, carrots, onions, celery, and peas in a creamy cashew sauce.
Serving suggestions: spinach salad with pecans, roasted cabbage, or vegan green bean casserole
Baked tofu with lemon & rosemary

When spring comes, I love to highlight bright, lemony flavors. No place is that clearer than in this baked tofu recipe, which is filled with the flavors of lemon and rosemary.
This low fuss main course is a longtime favorite.
Serving suggestions: creamy vegan polenta with sun-dried tomatoes, pesto rice, oven roasted potatoes with peppers & onions, or baked farro with tomatoes & herbs
Vegan schnitzel

If you prefer your Easter dinner to be on the indulgent side, make a batch of vegan schnitzel. Pan-fried to golden perfection, this is comfort food at its finest.
Crispy chickpea schnitzel is seasoned with rosemary and thyme for a hearty and filling main course that’s sure to satisfy.
Serving suggestions: sauteed summer squash and zucchini, apple chutney, or vegan potato salad
Vegan meatloaf

It doesn’t get more classic than vegan meatloaf. This comforting holiday main course is made with Impossible ground beef, sautรฉed onions, garlic, and spices. It has rich, meaty flavor, and copious amounts of umami.
Although a loaf is standard, this recipe can also be made as individual meatloaf muffins, which cook much faster. Get all the details in the post.
Serving suggestions: chili crisp Brussels sprouts, mustard mashed potatoes, or easy collard greens
Seitan ham with maple glaze

Simplify your vegan Easter dinner by purchasing a vegan ham roast at the grocery store. Then finish it with sticky sweet maple brown sugar glaze to make it extra special.
For extra kitsch, garnish the vegan ham with whole cloves.
Serving suggestions: fried Brussels sprouts with gochujang glaze, lemony potatoes, or air fryer asparagus
Vegan turkey roast

Although vegan turkey roast is usually associated with winter holidays like Thanksgiving and Christmas, it works equally well for your vegan Easter dinner.
Filled with fragrant spices and savory flavor, this tender roast is delicious any time of year. Cut it into thick slices, and serve with your favorite spring side dishes.
Serving suggestions: mashed potatoes, vegan turkey gravy, or crispy air fryer green beans
Seitan piccata

Seitan piccata is a swoon-worthy main course option that takes only 25 minutes to prepare. Browned slices of seitan are covered in a silky white wine and lemon sauce that’s dotted with capers.
It goes beautifully with mashed potatoes and sautรฉed kale (shown above), or choose from the serving suggestions below.
Serving suggestions: meatless turnip greens, air fryer baby potatoes, or breaded asparagus
Vegan crab cakes

Need a show-stopper that’s ready in about 20 minutes? Flaky vegan crab cakes are light and flaky with a crispy panko coating.
Made with artichoke hearts and chickpeas, the flavors of Old Bay seasoning, hot sauce, lemon zest, and lemon juice are bright and lively. Serve with a dollop of tangy lemon dill sauce.
Pan frying is my preference, but these delicious artichoke cakes can also be baked or air fried.
Serving suggestions: corn chowder, tomato cucumber salad, or spinach salad with strawberries
Grilled Portobello mushrooms

If it’s grilling weather where you are, why not take your holiday dinner outside? Grilled Portobello mushrooms make a delicious and meaty main course.
The mushrooms are marinated in a red wine vinaigrette, and cooked until they achieve dark, eye-catching grill marks.
Serving suggestions: vegan creamed kale in cashew sauce, marinated lentil salad, or vegan pasta salad
Mediterranean pasta with vegan feta

For something on the lighter side, this enticing Mediterranean pasta is dotted with roasted tomatoes, olive tapenade, vegan feta cheese, and fresh basil. Finally, it's tossed in a garlic olive oil sauce.
Serving suggestions: fried artichoke hearts, tomato bruschetta, or air fried summer squash
Cauliflower steaks with romesco sauce

If you’ve ever thought you could make a meal of roasted cauliflower, this is your chance. Vegan cauliflower steaks are cooked in the oven until golden.
They’re served atop lentils, and romesco sauce made with roasted bell peppers, tomatoes, breadcrumbs, and almonds.
Serving suggestions: fried olives stuffed with vegan feta, air fryer garlic bread, or fried zucchini slices
Vegan pesto pasta with artichokes

Vegan pesto pasta is the perfect main course for the beginning of spring.
Fragrant basil, garlic, and pumpkin seeds make the sauce, while artichoke hearts and crispy roasted chickpeas add texture and flavor.
Serving suggestions: asparagus bruschetta, warmed Castelvetrano olives, or fried squash blossoms
Air fryer stuffed peppers

For a cozy Easter entree that will stick to your ribs, make air fryer stuffed peppers filled with vegan hot Italian sausage, marinara, rice, onions, garlic, and Italian spices. If you like, finish with a sprinkling of melty vegan cheese.
These vegan stuffed peppers are made with kitchen and pantry staples. Plus, they come together in just thirty minutes, thanks to the air fryer. (This is the air fryer I use.)
Serving suggestions: spinach salad, red wine mushrooms, sautรฉed kale, or sauteed zucchini and summer squash
